
La Bomba Daiquiri


Jaquín Simó’s riff on the Daiquiri derives its name from the term “bomb” in Spanish—a nod to the French term grenade, meaning pomegranate. Grenade is also the term from which grenadine, the pomegranate syrup, derives its name. Simó uses a white rum like Barbancourt or Caña Brava. The tartness of fresh raspberries combines beautifully with lime’s acidity, while pomegranate molasses adds a complex tanginess to the mix. “This cocktail is an awesome way to prove that ‘fruity’ and ‘sweet’ are not synonymous,” says Simó.
