Leilani Volcano (Modified)
Created in 1970 for Walt Disney's Polynesian Resort. The original calls for 2 1/2 oz Coconut Rum and 1/4 oz Rock Candy Syrup in place of the Aged Rum and Coco Lopez. But decent Coconut Rums are hard to find.
Fruity but in a good way. Well balanced with the coconut and guava coming through, the pineapple more subtlety. Not bad for a 70s Disney cocktail. 4/5 stars
