
Elusive Dreams


Cuba's Hotel Natoli's National cocktail - rum, pineapple, lime, and apricot - takes a decidedly tropical turn. I've swapped out the apricot in favor - of banana, then doubled down on the pineapple, using fresh pineapple juice and splitting the rum component between the traditional white rum and Plantation pineapple rum, which is infused with both the rind and fruit of Victorian pineapples. Cinnamon syrup and tiki bitters provide a baking spice note for ad'ded depth.
Ingredients
- Pineapple Juice - 1 fl oz
- Lime Juice - 1½ Tbsp
- Cinnamon Syrup - 1 Tbsp
- Demerara Simple Syrup - 1½ tsp
- Grenadine - 1½ tsp
- White Rum - 1 fl oz
- Plantation Stiggin's Fancy Pineapple Rum - 1 fl oz
- Banana Rum - 1 Tbsp
- Tiki Bitters - 1 dash
- Ice - 5 oz
- Pineapple - 1 wedge
- Purple Orchid - 1
