Martinez
The Martinez is considered the prototype Martini, the main difference in
the two being that the Martinez uses a slightly sweetened gin (traditionally
Old Tom gin)
and sweet vermouth where the Martini uses dry versions. Because of this, the
Martinez has an entirely different flavor than the Martini. Using sweeter
gin and vermouth in the recipe will make a Martinez more like the original
1880s version. Substituting drier ingredients will make it more like the
1890s Martinez, a step closer to our modern Martini.

- Old Tom Gin - 2 fl oz
- Sweet Vermouth - 1½ Tbsp
- Maraschino Liqueur - 1 Tbsp
- Orange Bitters - 2 dash
- Orange Peel - 1
