What treatise on alcohol would be complete without a nod to the world's most popular malted beverage? Beer dates back to the Neolithic period when humans first began harvesting grain. It is a fermented concoction of malted grain, sugar, water, and yeast. Commonly hops or other bitter herbs are added to offset the sweetness of the malt.

Beer comes in many varieties from light to dark. Lager style beers are cold fermented over a longer period than ales, and are typically lighter in color. Stouts and porters, both ales, get their color and rich flavor from dark roasted barley.
