Cinnamon syrup is made by soaking crushed cinnamon sticks in simple syrup over night in the refrigerator, then straining the syrup to remove the chunks of cinnamon. It can add a nice spicy-sweet note to a cocktail without the extra alcohol from a cinnamon whiskey, vodka, or liqueur.
