My Skyr Caesar Dressing
For those who are vegan, it can be tricky to replicate the flavor of Caesar dressing because the eggs and anchovies play such a prominent role. With this recipe, you don’t have to continue passing on the flavor of this classic dressing. Soaking cashews overnight softens them into a blend-able state and they add a lovely, creamy base to the dressing. The salty brine flavor of the capers makes the perfect substitute for anchovies and we've added just enough garlic to tie it all together. Toss this glorious dressing with crisp romaine lettuce and your favorite croutons for a satisfying crunch.
