Vinegary BBQ Sauce
Vinegar-based BBQ sauce, also known as Carolina BBQ, is typically a spicy, thin sauce used as a marinade as well as during cooking. Although there are numerous methods for barbecuing, the standard slow, hot smoke cooking where meats are cooked over low indirect heat works well with this type of sauce. Apply the sauce a day in advance and allow the meat to rest in the sauce prior to cooking, then reapply throughout the cooking process to form a rich, tangy layer of flavor on the exterior of the meat.
