Chermoula
Chermoula, a bold, spicy marinade based on onion, garlic, and fresh herbs, is used all over Algeria, Morocco, and Tunisia. Most commonly used to complement fatty, oily fish such as salmon, trout, or swordfish, it also works nicely on poultry or tofu. Chermoula comes together quickly and does not require much time to effectively season your protein. Searing in a hot pan coated with oil will cause the marinade to form a beautiful crust, locking in flavor and moisture. The marinade tastes intensely of onion when raw but the flavors soften as the marinade cooks. Use one serving per pound of meat to marinate
