Broccoli Mushroom Cashew Bisque

Most bisques are loaded with butter and cream but this flavorful soup is actually vegan! Soaked cashews are added to the soup before it’s blended, adding a rich and creamy element without all of the unhealthy fat. The super smooth consistency gets some added texture with sauteed shiitake mushrooms, toasted sesame seeds, and a drizzle of tamari.
