Often mistaken for a vegetable, eggplant is actually a fruit. Charring the exterior of the eggplant lends a rich, smoky flavor to this Baba Ganoush. Because the eggplant is roasted whole, you will need to scale the recipe for the size of your fruit. Although there are many variations of this recipe, we think this version will be your new favorite with its zippy flavor complemented by ground cumin.
