Sweet Pea And Onion Salad

I have been making Sweet Pea and Onion Salad since my college days at the University of Houston. It is a very simple salad and it packs a fantastic taste. During college I used to work in a delicatessen where I learned how to make a lot of non-traditional southern dishes. Sweet Pea and Onion Salad was one of them. Every time I make this salad I'm asked about the ingredients. Once someone samples it, there is never enough to go around.
