Chocolate Pate

This recipe is a spin-off of Salame de Cioccolato (Italian for Chocolate Salami), a holiday staple originating in Italy and Portugal. The original confection and this version consist of a decadent blend of chocolate, egg yolks, nuts, candied/dried fruit, sugar, cookie crumbs, coffee, and spirits that are formed into logs to mimic salami. This variation results in a shape that suggests the look of pâté. Of course there is no meat in this pâté but don’t let that stop you from enjoying it with slices of fresh baguette, a drizzle of olive oil and a little sea salt.
