Pate Brisee Pre-baked Pie Dough Single Shell

Sometimes a pie or quiche recipe requires a pre-baked crust. No bake fillings, such as mousse or lemon meringue, will require a crust that is completely baked. Delicate fillings that require a shorter bake time than the crust, such as quiche, need a crust that is not baked all the way (par-baked). This pie crust recipe includes instructions for both methods.
