Chocolate Pudding Cake
"Pudding is a somewhat deceptive term here. This cake is more like a giant serving of ganache. Be warned, it is very dense and very rich. When I was at Lucas Carton in Paris, I was trying to make a filling for a sponge-based chocolate cake, but what came from the oven was a gloppy mess. We put the "cake" into a mold and refrigerated it to see what it might be like the next day. When my boss unmolded it and tried it, he said it was too simple to be of professional use. Meantime, I was enjoying a second helping and keeping my notes on the experiment. The cake was so rich it was like a pudding, and I knew that one day I might have use for something so simple and chocolaty.
"For a dinner party, you could serve it with raspberries and perhaps some vanilla ice cream. But portions should be small (even for kids)."
