Pets de Nonne
"Pets de nonne are puffy fritters that are flavored with orange flower water. They are traditionally made at the time of Carnival, or Mardis Gras, in February. They are best served piping hot, and they can also be slit open and filled with jam or with pastry cream lightened with whipped cream (one part whipped cream to three parts pastry cream). Whether served warm or at room temperature, they would be a great addition to your Christmas buffet."
