Sweet Potato Oatmeal Cookies

A tasty twist on a classic cookie. This recipe uses the natural sweetness of sweet potatoes blended with the richness of semi-sweet chocolate chips and toasted pecans. This combination makes a thick, chewy, meaty cookie to fill you up and satisfy your taste buds. This recipe also uses the cardamom, cinnamon, and nutmeg found in most oatmeal cookies. This combination really gives the spice of the cookie a front seat on your palette. Yams will also work if you prefer them to the standard sweet potatoes and will add a nice color to your cookie. This cookie really sets itself apart from more traditional oatmeal cookies.
