Simple Jammies

These sweet and tender cookies are just fine on their own, but why not fill them with your favorite jam, marmalade or fruit preserve? These cookies really benefit from sitting for about 12 hours after filling. The crisp cookies absorb some of the moisture from the jam which helps to create a delicate and cohesive sandwich.
