Pumpkin Whoopie Pies
Autumn won’t be complete without trying these cookies. It's a wonderful light and caky spiced pumpkin cookie with a generous layer of cream cheese sandwiched in the middle. They're Jumbo sized so you won’t be left wanting, but that doesn’t mean you won’t eat two (or maybe three). One fun idea is to make your cookies a bit oblong when you scoop the dough. This makes delicious little football sandwich cookies that are perfect for the big game.
