Pecan Pumpkin Spice Cookies

This pumpkin spiced pecan cookie is perfect for fall. It boasts loads of whole pecans, and pumpkin pie spice adds flavor without the hassle of opening a whole can of pumpkin puree. Toasted pecans really make a great addition to this cookie, but plain raw pecans will work just as well if you want to skip that step.
