Chocolate Shortbread Cookies

Shortbread cookies are some of the simplest and most basic cookies. A traditional shortbread cookie consists of only three ingredients: butter, sugar, and flour. The ratio of these ingredients to each other give shortbread its crumbly texture. The high fat content in the dough inhibits gluten from forming as in other cookies, cakes, and breads. This version has the addition of cocoa powder giving the cookies a deep chocolate flavor. Like most shortbreads, these cookies can be enjoyed on their own or can be used to make a crust for a pie or cheesecake.
