Spanish Coffee
Spanish coffee is an Americanized version of the carajillo, a simple Spanish pairing of coffee and rum or other spirits. This recipe is similar to the famous Spanish coffee served at Huber's, a Portland, Oregon institution since 1879. One word of caution: do not ignite the liquor to caramelize the sugar on the rim unless you're sure your mug is made of tempered glass. The flame could cause an untempered glass to shatter and spread burning liquid everywhere.
